Quick Pickled Red Onions

These are a quick and delicious way to add a burst of flavor and crunch to your tacos!

1/2 Red Onion
1/2 Cup of White Vinegar
2 Tbsp of White Sugar
1 tps Salt
1 tsp black peppercorns

1. Slice onion with the grain from top to bottom of the onion
2. Put white vinegar, sugar, and salt into a sauce pan and bring to a boil, then reduce to a simmer until sugar has fully dissolved
3. Briefly cook onions in liquid until
4. Transfer onions and liquid into a bowl
5. Let sit for approx. 20 minutes until the onions have pickled
