Taco Tuesday is my absolute favorite day of the week. I get to bring my friends and family together so they can eat. I have everyone gather around in the kitchen to pitch in and take over a small roll in preparing a mouth watering, delicious, and exploratory meal. Someone chops cilantro, someone shreds cheese, someone washes pots after I'm done using them, etc. Everyone gets a chance to be involved so they can help make this taco Tuesday a success.
Every week I prepare a menu for the taco's we're having and look for a different element and idea for the night whether it be preparing the protein a different way or trying out a new topping, or a different side, or all three. A new challenge and exploration of different elements of a puzzle which build into a masterpiece of a seemingly simple taco bursting with careful consideration, friendship, and flavor.
Nothing makes me happier than being able to cook for everyone and have one night a week where everyone comes together to just relax, get involved in the cooking process, and thoroughly enjoy eating.

Warm Corn Tortillas
Heat by placing over direct heat source for 10-20 seconds per side
